Method

  1. Season the chicken strips and sear in a misted skillet over medium-high, 3–4 minutes per side to 165°F.
  2. Toss the hot chicken with the buffalo sauce right in the pan so it glazes.
  3. Lay out the wraps. Down the center of each: ranch, lettuce, slaw, carrot, celery, then the glazed chicken.
  4. Roll tight, then sear the wraps seam-down in the hot pan 1 minute per side until golden and sealed.
  5. Slice on the bias. The cold crunch against the hot chicken is why this beats takeout.
