Method

  1. Pulse the dates, crisp rice, almond flour, and salt into a sticky crumb; divide between 4 jars and press down.
  2. Whip the cream-cheese-style spread, dairy-free yogurt, protein, allulose, lemon, and vanilla until completely smooth and mousse-like. Taste — it should have real cheesecake tang; add lemon until it does.
  3. Pipe or spoon over the crumb layers.
  4. Cap each with a tablespoon of jam and fresh strawberry slices. Chill at least 1 hour — the layers set and the crumb turns 'crust'.
